The grapes are manually harvested and immediatly after destemmed and sofly crushed.
Alcoholic fermentation lasts at least 15/20 days. In this period caps are often broken and under the surface, in order to obtain the best possible extraction of desired substances.
After maleolactic fermentation, wine settles in large barrel made out Slavonian for a minimum of 12 months and then filtered and bottled.

After the final check by our oenologist and the endorsement by \\\"Consorzio del Chianti Classico\\\", wine is bottled and rests for about six months before its release. It reachesmaturity between 3 and 5 years after harvest

After maleolactic fermentation, wine settles in steel vats up to the bottling.
Our oenologist suggests the right time to bottle this very tasty wine, which we recommend to drink through the meal.
